OKONOMIYAKI (egg based Japanese style pancakes)

Hey all:) Hope your all enjoying the site:) T ought would take a trip to japan to one of their favorite meals! OKONOMIYAKI

Okonomiyaki literally means "cook what you like," and so there is no set recipe for these egg based pancakes. You can choose whatever ingredients you prefer or even use left overs with which to make okonomiyaki. The pancakes are tasty, filling, simple to make as well as being inexpensive, so they're particularly popular with people on a tight budget. Feel free to alter the following recipe to include ingredients that you enjoy. I suggest trying shrimp, squid, natto, noodles, seaweeds, remember... cook what you like!
INGREDIENTS
2 Eggs
1 1/2 tablespoon of flour (I like using whole wheat,
but white flour works just as well)
1 pinch of baking powder
3 tablespoons dash

1 tablespoon white miso
1 small handful of fresh bean sprouts
2 leaves of fresh cabbage (chopped fine)
2 shiitake mushrooms (stemmed and chopped fine)
4 snow peas (chopped fine)
1/2 small carrot (chopped or grated fine)
vegetable oil

Break the eggs into a bowl, add the dashi and miso, beat well. Add the flour and baking powder, beat well to blend all ingredients.

Heat a small frying pan, add a little bit of vegetable oil and fry the thicker vegetables first (cabbage, carrots, etc.). When these vegetables are limp and translucent add the more delicate vegetables (bean sprouts, etc.) and continue frying.

Pour the egg mixture over the frying vegetables and place a cover on the pan. Turn down the heat to low and allow to cook for two or three minutes. When the surface of the "omelet" has set, use a spatula to carefully flip the pancake over. Fry for another minute of so until cooked and then serve!

Poori,puri:D




PURI

Poori Ingredients

You will need:
  • 1/3 c. white flour
  • 1/3 c. whole wheat flour
  • 1/4 c. water
  • 1/4 tsp. salt
  • 2 tbsp. vegetable oil
  • oil for frying

Make the Poori Dough

Put the whole wheat flour in a large mixing bowl or platter. Add white flour to it and salt and mix together. Now add a little water at a time and mix the flour to form dough. Knead it all together until you get a proximity of soft dough.

Then add 2 tbsp. of oil. When you do, the dough starts coming together very well until you get a nice consistency.

Shape the Poori

Oil your working surface. Then take the dough out of the bowl and knead it for another 5 minutes. Pinch about a quarter of your dough and shape it into a ball. Roll each ball into a 3 inch round. Repeat the same with the rest of your dough. Each poori is made right before frying.

Fry the Poori

Fill your wok/deep fry pan with oil and heat it on high. Deep fry the pooris one at a time, pressing very gently on each side with a slotted spoon. Keep pressing it under the oil until the poori puffs up.

Then, turn over and fry the same way on the other side. Place it on a plate lined with paper towel to absorb excess oil. Pooris are made right before they're eaten.

LASAGNA

Yummy cheesy dish that will keep the whole family happy!

This recipe is great tested it the other day and Mmmmm MMMM mmmmm:)


Ingredients:

16 pieces (about 16 oz.) Lasagna noodles, uncooked
1 lb. ground beef
3 cups (about 28-oz. jar) spaghetti sauce
4 cups (2 lb.) ricotta cheese
2 cups (8 oz.) shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese
2 eggs
2 teaspoons chopped oregano
2 teaspoons chopped basil
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper

Directions:

1. In large skillet, brown meat; drain.

2. Stir in spaghetti sauce; simmer 10 minutes.

3. Cook pasta according to package directions; drain. Lay flat on foil to cool.

4. Heat oven to 350°F.

5. In large bowl, stir together ricotta cheese, 1-1/2 cups mozzarella cheese, Parmesan cheese, eggs, oregano, basil, garlic, salt and pepper.

6. Spread about 1/3 cup meat sauce on bottom of 13 x 9 x 2-inch glass baking dish. Arrange 4 pasta pieces lengthwise over sauce, overlapping edges. Spread one-third cheese mixture over pasta; spread with about 3/4 cup meat sauce.

7. Repeat layers twice, beginning and ending with pasta. Top with remaining meat sauce; sprinkle with remaining 1/2 cup mozzarella cheese and additional Parmesan cheese, if desired.

8. Cover with foil. Bake 45 minutes or until hot and bubbly. Remove foil; bake about 10 minutes longer, or until lightly browned. Let stand 10 minutes before cutting.

Cheesecake





Cheesecake
Another wonderful desert that comes in many different flavors,this recipe is for one of the more simple styles:)

Ingredients:

3 lbs cream cheese

5 eggs

3/4 tsp vanilla

1-1/2 oz.lemon juice

(real)

3/4tsp orange abstract

12 ozs powder sugar

Direction:

Whip cream cheese for 15 minutes. Add egg yolks, vanilla, lemon and orange. Whip an additional 3 minutes. Slowly add powdered sugar and blend another 3 minutes. Slowly add egg whites and mix for another 5 minutes on medium speed. Crust: 12 cups graham cracker crumbs 3 cups pecan pieces 3 cups margarine (clarified) Direction: Mix ingredients together to form crust. Press crumb mixture into spring form pan so it is approximately 12" thick. Pour in batter and bake approximately 1 hour.

You are done. Taste it!!!

Chocolate Crackles





Ingredients
Chocolate Crackles
250g copha
4 cups Rice Bubbles
1 cup of icing sugar
3 tablespoons cocoa
¾ cup desiccated coconut
¾ cup sultanas
Paper cupcake cases


Method
Combine dry ingredients and sultanas into a mixing bowl.
Melt copha gently, it does not need to be smoking hot but just melted.
Cool slightly.
Pour into dry ingredients and mix well.
Spoon into paper patty cases.
Chill until set.

Rice Bubble Cakes(honey)

Ingredients

Directions

    Boil the butter, sugar and honey for 5 minutes.

    Add the rice bubbles and stir until all the rice bubbles are moistened (which takes about 1 minute).

    Spoon the mixture into small paper cases (If you don't have them you may roll them into balls).

    Set it in the refrigerator and serve when cool!
